GIRA FOODSERVICE has been updating every 4 years a multi client study about the structure of the Foodservice Market in Switzerland. The latest study has been given an overview of the Foodservice Market in Switzerland based on 2007 key facts & figures as well as future trends up to 2010. In terms of turnover, 1 210 Euros are spent each year on eating out of home per inhabitant. More than 77% of the total value are generated by the Commercial Foodservice Market. The meals which is consumed out of home represent 12% of all meals eaten by Swiss people, i.e. almost 128 meals and snacks per year per inhabitant, which gives another ratio of around 2,5 meals per week. By considering future trends in value up to 2010 in the Social Foodservice sector, as a whole the market will remain almost at the same level. B&I and Healthcare sectors will continue to see on a negative trend whereas Education and Welfare sectors will register a slight increase in terms of number of meals. The Commercial Foodservice sector is likely to keep steadier growth rates from 2008 onwards. The sector will benefit from the greater demand of take-aways, coffee bars, fast-casual concepts, home delivery, snacks in service stations, party service / event catering as well as the growing popularity of convenience stores. In the future, specialised operators will tend to increase their penetration rate in volume in both foodservice sectors. In the social catering sector, two thirds of the growth of the number of meals will come from the B&I sector, and 23% from the Education sector. In the Commercial Foodservice Market, the chains in the Quick Service Restaurants market will be, by far, the most dynamic. The Transport market will also register important growth in operators' market shares. Some key figures about food purchases in the foodservice market in Switzerland are also given: the Commercial Foodservice sector is generating 70% of the total amount of food purchases in the Foodservice market. |
